Ingredients:
Instant coffee - 3 tsp.
Milk - 350 ml
Granulated sugar - 5 tbsp. l.
Vanillin - a pinch
Gelatin - 20 g
Water - 490 ml

How to make jelly with milk and gelatin

Soak the gelatin until it swells.

To do this, take two bowls and pour 10 grams of gelatin into each. And fill with water in a volume of about 70 ml.
While the gelatin is swelling, we proceed to the preparation of milk and coffee jelly.
For coffee - 3 tsp. pour coffee into a measuring cup and pour 350 ml of boiling water, add 3 tbsp. l. sugar and a pinch of vanillin.
The coffee should cool slightly, and then the swollen gelatin is added to it.

Then the coffee must be poured into a ladle and put on the fire in order to heat until the gelatin is completely dissolved, but so that the coffee does not boil. Then cool the coffee. The coffee jelly is now ready to start making the milk jelly.
Pour 350 ml of milk into a ladle and put on low heat. Add 2 tbsp. l. sugar and a pinch of vanillin. Stirring, let the milk boil, then cool a little. And add gelatin, after which we heat the resulting mixture, not letting it boil until it is completely dissolved. Then you need to let the milk jelly cool.

Shaping the jelly

Now that both mixtures are ready, we take silicone molds.
We fill three layers, it is possible less or more depends on the desire. We make the first layer of milk in one part of the molds, and coffee in the other. And we send it to freeze in the freezer, so faster, or in the refrigerator. It takes about 20-30 minutes per layer. Then we change the colors of the layers, pouring over the previous ones and again send them to the freezer until they solidify.

It took about an hour.

In order to easily remove the jelly from the molds, it must be placed in warm water. Half a minute is enough for this and it can be easily removed.

There were 10 servings in total. It turned out very tasty! Bon Appetit!

  • Gelatin - 1 pack (25 g).

How to make homemade milk jelly with gelatin

If you don't have cinnamon on hand, you can take a few leaves of mint or lemon balm. The taste will be amazing. If you don't have anything on hand, do not add ground cinnamon or dried mint, it will not taste like that, so it is better to make pure milk jelly.

We begin to prepare the jelly by soaking the gelatin in water and leaving it to swell. If you took instant gelatin, then literally in 10-15 minutes, it will swell, increase in volume and absorb all the liquid.

While the gelatin swells, prepare the base. Add sugar and cinnamon to a saucepan or saucepan. Add milk. Put on fire and heat, stirring occasionally, until sugar dissolves. You do not need to boil milk. It only needs to be heated.

It is also worth dwelling on the choice of milk. To prepare dessert without regard to calories, we advise you to take high-fat pasteurized milk. If you want to use homemade milk, then you must first boil it, remove the froth, then let it cool and only then prepare the dessert.

When the milk has warmed up, take out the cinnamon stick, add the gelatin and put it on low heat again and stir to dissolve the gelatin.

We pour warm jelly into the dishes of your choice - these can be jars for yogurt, glasses, glasses, cups or silicone molds.

Let the jelly cool to room temperature and only then put it in the refrigerator until it solidifies.

This is what frozen milk jelly looks like.

We got acquainted with the basic recipe for milk jelly. Now we suggest you diversify it a little with plum puree. You can take any berries - fresh or frozen.

Immediately soak the gelatin in water.

Wash the plums and remove the seeds. Grind the plums with an immersion blender.

Be sure to grind the plum puree through a fine sieve to remove the skin. It literally takes a couple of minutes. Add sugar to the puree. If plums or berries are sour, add more sugar than indicated in the recipe.

Put the plum puree over low heat and heat it up. Add dissolved gelatin to it. Stir until the gelatin dissolves. Now you can cool the puree to room temperature. Pour it over milk jelly only after the latter has solidified.

If you decide to pour milk jelly into silicone molds, then you can first pour mashed potatoes, and then milk jelly. Then, when serving, the puree will be on top. If you pour milk jelly at once, and then puree, then the puree will be served from the bottom.

Using milk, fruit and coffee jelly, you can make desserts in the form of cakes. These desserts look most beautiful in transparent dishes. You can make several layers of different colors, but pour each new layer into the dishes only after the previous one has solidified.

Skillfully prepared milk jelly can decorate any holiday or simply cheer up on a weekday. After all, this magnificent dessert (photo) is being prepared in milk - a product that is incredibly tasty and healthy, and its recipe is not difficult.

Milk is a product that accompanies a person throughout his life. We have become accustomed to it since childhood and, often, do not even think about how useful and necessary it is.

Here are just a few facts:

  • one liter of traditional cow's milk is nutritionally comparable to half a kilogram of meat;
  • the same liter satisfies a person's daily calcium requirement;
  • the composition of milk is unique - it contains more than a hundred components that are absolutely necessary for the normal growth and development of the body;
  • milk is used to treat many diseases, quickly restores strength, strengthens the immune system, and has a calming effect.

And, finally, a lot of tasty and healthy things are prepared from milk: cream and sour cream, cheeses and cottage cheese, dairy products and even condensed milk, beloved since childhood.

And, since we are talking about desserts, it should be noted that the creation of confectionery products is generally unthinkable without the participation of milk. Almost every baking recipe is based on the use of this wonderful product. And how delicious all kinds of milkshakes, soufflés, jellies and mousses are! By the way, the famous "Bird's milk" is also a kind of milk dessert.

Today we propose to talk about how to make milk jelly - tasty, easy and healthy. The recipe for this marvelous delicacy is so simple that even those who are just taking their first steps are able to do it.

Basic recipe

There are countless variations of milk jelly. But, before letting go of your imagination and creating your own version of the most delicate delicacy, you should study the main, so to speak basic, recipe for making the famous dairy dessert. You will need a minimum of products:

  • half a liter of milk (necessarily high fat content - 3.2%);
  • 30 g gelatin;
  • 2 tbsp. l. granulated sugar;
  • cinnamon or vanilla (1 stick);
  • half a glass of water.

Milk Jelly Recipe:

  1. Gelatin is poured with cold boiled water and set aside for a while. It should swell.
  2. Pour sugar into the dishes (preferably with a non-stick coating), put a stick of cinnamon (or vanilla) on top, pour milk and bring it almost to a boil. This is important - you cannot boil milk so as not to spoil the taste of the dessert.
  3. So, hot milk was removed from the fire on time, now it needs to be allowed to cool down a little. A quarter of an hour is enough - says the recipe. During this time, the spices will just have time to give their delicious aroma to the milk.
  4. After 15 minutes, remove the cinnamon and dissolve the gelatin in a water bath. It is impossible to boil it (just like milk) - just dissolve it. It remains to combine milk and gelatin (which is better to pour in, filtering), mix well and pour the finished jelly into molds. Then place them in the refrigerator to allow the gelatin to do its job.

Fully frozen milk jelly can be served directly in the molds in which it has frozen, and garnished with berries or grated chocolate on top (photo). But you can do differently (though some skill is required here): lower the molds in hot water for a couple of seconds, then turn them over, substituting a portioned plate under the contents.

We increase the appetizing

After you have mastered the basics, it's time to slightly complicate the dessert, to make it even more beautiful and appetizing. For this, any berries or fruits are suitable: seedless grapes, raspberries, strawberries or cherries, slices of bananas, and so on. You just need to keep in mind that with kiwi and pineapple, the jelly will harden longer.

The recipe for such a delicacy is extremely simple: before pouring milk jelly into molds, put several pieces of fruit on the bottom. That's all the wisdom.

You can make the dessert taste milky-chocolate - then you need to add a chocolate bar to the basic composition of the products. You just need to grate it and dissolve it in the milk while it heats up.

Two-layer jelly - aerobatics

First, consider a recipe where berries will act as the second - bright - layer. To create it, in addition to the ingredients present in the basic version, you will need to stock up on:

  • strawberries (fresh or frozen) - 300 g;
  • 2 tbsp. l. granulated sugar;
  • 2 tbsp. l. boiled water.

Milk jelly is prepared according to the basic recipe. With the difference that 1 tablespoon will need to be separated from the swollen gelatin - it will be needed for the berries.

The recipe does not recommend rushing to pour the prepared milk-gelatin mixture into molds. Just let him temporarily stand aside.

In the meantime, you need to take care of the berries: put them in a saucepan, add water, cover with sugar and boil for 5 minutes. Then rub the strawberries through a strainer and dilute the left gelatin in this puree.

Now it's time to fill the molds: pour berry jelly into them up to half and send them to the freezer (for faster solidification) for 5 minutes. Only now the recipe allows to finish the formation of the dessert with the milk mass awaiting its hour.

After that, the two-layer delicacy must be placed back in the refrigerator and wait until it hardens completely. Such jelly looks more impressive without molds (photo), which means that it must be removed on plates before serving, as described in the basic recipe.

Milk coffee jelly

This is an example of a different color and flavor combination: milk and coffee. To implement it, you will need:

  • 2 cups high fat milk;
  • 2 cups freshly brewed coffee
  • 4 tablespoons of sugar;
  • 30 g gelatin;
  • ½ glass of cold boiled water;
  • a pinch of vanilla and cinnamon.

Manufacturing instruction:

  1. First, the gelatin is soaked. While it swells, coffee is brewed with 1 spoon of sugar. Then it cools down a little, "dressed" with cinnamon and half of the swollen gelatin.
  2. The milk is brought to a boil with 3 tablespoons of sugar, it also cools a little, flavored with vanilla and combines with the remaining gelatin.
  3. You need to form a dessert in the same way as a berry one - in two layers: first, a coffee mixture, and after it has set, a milk mixture. Or alternate between white and dark layers.

Based on the presented recipes, you can create your own, completely unusual variations of a dairy delicacy by combining various components. After all, this dessert provides endless spaces for imagination.

Video recipe for making milk jelly

Milk jelly is an easy dessert, it takes a minimum of time, effort and products to prepare it. All you need to get for the basic recipe is high-fat pasteurized milk, sugar, and gelatin. You can diversify it with berries, syrups, fruits or chocolate.

Ingredients

  • milk 3.2% fat 500 ml,
  • gelatin 30 g,
  • sugar 4 tbsp. l.,
  • cinnamon stick
  • water 100 ml,
  • strawberries (fresh or frozen) 300 g,
  • boiled water 50 ml.

Preparation

    Pour gelatin from a bag into a glass, add 100 ml of boiled warm water and leave it alone so that the gelatin swells.

    Pour 2 tbsp into the ladle. l. granulated sugar and put a cinnamon stick. Cinnamon can be substituted with a vanilla stick or vanilla essence. But you can add nothing except sugar.

    Pour milk into the same place. I recommend using pasteurized milk with a high percentage of fat. It is brought to a boil, but not boiled. If the milk is boiled, the taste of gelatin will be clearly present in the finished dessert. Skim milk is also not suitable, ready-made jelly will turn out to be an unappetizing bluish tint.

    Bring pasteurized milk to a boil and remove from heat. Let the milk cool slightly, and the cinnamon stick to brew for 15 minutes.

    Remove the cinnamon stick from warm milk and dissolve the swollen gelatin. Mix very thoroughly so that no lumps of gelatin remain.
    That's all, the milk jelly is ready, pour it into portion forms and put it in the refrigerator until it solidifies.

    This is what the finished milk jelly will look like. Garnish with mint leaves, grated chocolate or orange peel before serving. You can serve the jelly in tins or dip the form in hot water for a few seconds and turn it upside down on a plate. The milk jelly will easily separate from the walls and go onto the plate.

    How else can you make milk jelly? For example, make it two-layer by pairing it with strawberry jelly.

    So, we prepare milk jelly, as described above, but we are not in a hurry to send it to the refrigerator. We leave a tablespoon of the swollen gelatin for the strawberries. We place the berries in a bowl, add 2 tbsp. l. granulated sugar, pour in 2 tbsp. l. water and boil over a fire for five minutes.

    Remove the strawberries from the heat and grind them through a fine sieve. We discard the pulp, and in the resulting sauce we dilute a tablespoon of swollen gelatin.

    Silicone molds and fill them halfway with strawberry sauce. To make the jam harden faster and make strawberry jelly, put the molds in the freezer for 5 minutes.

    When the strawberry jelly has solidified, pour the milk jelly into the molds. Now molds with ready-made jelly can be placed in the refrigerator until they solidify. As a rule, it hardens from 20 to 30 minutes.

    We take out the milk jelly with strawberries from the refrigerator, place the molds in hot water and turn them upside down on plates. This will create the bottom layer - milk jelly, and the top layer - strawberry. Decorate and serve.
